Ingredients

  • 4 large peppers, halved and deseeded
  • 400g lean turkey mince
  • 150g brown rice, cooked
  • 400g tin chopped tomatoes
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 60g reduced-fat cheddar, grated
  • 1 tbsp olive oil
  • Fresh parsley

Method

    Preheat oven to 190°C.

    Cook onion and garlic in oil 3 min. Add turkey and spices, cook 8 min.

    Stir in tomatoes and rice. Season.

    Fill pepper halves with mixture. Place in a roasting tin.

    Top with cheese. Bake 25–30 min.

    Scatter parsley and serve.
