Heat olive oil in a large pot over medium heat. Add onion and cook for 5 minutes until softened.
Add garlic, carrots, cumin, turmeric, and paprika. Cook for 2 minutes.
Add lentils, chopped tomatoes, and vegetable stock. Bring to a boil.
Reduce heat and simmer for 25–30 minutes until lentils are completely soft.
Use a hand blender to partially blend for a thicker texture, or leave chunky.
Season with salt, pepper, and a squeeze of lemon juice before serving.
