Ingredients

  • 4 large portobello mushrooms, stalks removed
  • 250g lean turkey mince
  • 1 tin (200g) chopped tomatoes
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 40g reduced-fat mozzarella, grated
  • 1 tbsp olive oil
  • Salt and pepper

Method

    Preheat oven to 200°C.

    Heat olive oil in a pan. Cook onion and garlic for 5 minutes.

    Add turkey mince and brown for 5 minutes.

    Add tomatoes and oregano. Simmer 5 minutes. Season well.

    Place mushrooms on a baking tray. Fill with turkey mixture.

    Top with mozzarella. Bake 15–18 minutes until mushrooms are tender.
