Ingredients

  • 500g lean turkey mince
  • 300g wholegrain spaghetti
  • 1 tin (400g) chopped tomatoes
  • 1 tin (400g) passata
  • 1 onion, finely diced
  • 2 carrots, grated
  • 2 celery sticks, finely diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 tbsp olive oil
  • Salt and pepper
  • Parmesan to serve

Method

    Heat olive oil in a large pan. Fry onion, carrot, and celery for 8 minutes.

    Add garlic and cook 1 minute.

    Add turkey mince and brown for 5 minutes.

    Add tomatoes, passata, oregano, and basil. Bring to a boil.

    Simmer 20 minutes, stirring occasionally. Season well.

    Cook spaghetti per packet instructions.

    Serve bolognese over spaghetti with grated parmesan.

Tip: Turkey mince bolognese has around 40% less saturated fat than traditional beef bolognese.
