  • 2 salmon fillets (150g each)
  • 150g soba noodles
  • 2 tbsp white miso paste
  • 600ml dashi or vegetable stock
  • 2 pak choi, halved
  • 3 spring onions, sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • Sesame seeds to serve

    Cook soba noodles per packet. Drain and rinse.

    Simmer stock with miso, soy, and ginger 5 min.

    Pan-fry salmon skin-side down 4 min, flip 2 min. Flake.

    Blanch pak choi in broth 2 min.

    Divide noodles into bowls. Ladle broth and pak choi over.
