Ingredients

  • 200g raw king prawns
  • 150g flat rice noodles
  • 2 eggs, beaten
  • 100g beansprouts
  • 3 spring onions, sliced
  • 2 garlic cloves, minced
  • 2 tbsp tamarind paste
  • 1 tbsp fish sauce
  • 1 tbsp low-sodium soy sauce
  • 1 tsp coconut sugar
  • 1 tbsp groundnut oil
  • Lime, peanuts, and coriander to serve

Method

    Soak noodles per packet instructions. Drain.

    Mix tamarind, fish sauce, soy, and sugar.

    Stir-fry garlic in oil 30 sec. Add prawns, cook 2 min.

    Push to side, scramble eggs.

    Add noodles and sauce, toss well.

    Add beansprouts and spring onions. Serve with lime and peanuts.

Tip: Using tamarind paste instead of a ready-made pad thai sauce cuts sugar content by around 60%.
