Herb-crusted pork tenderloin roasted alongside colourful vegetables. One of the leanest cuts of meat — high in protein and ready in 35 minutes.

Ingredients

  • 400g pork tenderloin
  • 2 courgettes, sliced
  • 1 red pepper, sliced
  • 200g cherry tomatoes
  • 3 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme
  • 2 tbsp olive oil
  • Salt and cracked black pepper

Method

    Preheat oven to 200°C.

    Rub pork with garlic, rosemary, thyme, 1 tbsp olive oil, salt, and pepper.

    Toss vegetables with remaining olive oil and season.

    Place pork and vegetables on a large baking tray.

    Roast 22–25 minutes until pork reaches 63°C internally.

    Rest 5 minutes before slicing.

Tip: Pork tenderloin is as lean as skinless chicken breast — just 3g of fat per 100g.
