Ingredients

  • 600g pork tenderloin
  • 2 shallots, diced
  • 2 garlic cloves, minced
  • 150ml chicken stock
  • 3 tbsp reduced-fat crème fraîche
  • 2 tbsp Dijon mustard
  • 1 tsp wholegrain mustard
  • 1 tbsp olive oil
  • Fresh thyme
  • Salt and pepper

Method

    Season pork and sear in oil 3 min per side. Transfer to oven at 180°C for 15 min.

    Rest 5 min, then slice.

    Soften shallots and garlic in same pan 2 min.

    Add stock, reduce by half.

    Stir in crème fraîche and mustards. Simmer 2 min.

    Serve pork with sauce and thyme.

Tip: Pork tenderloin is one of the leanest cuts of meat, comparable in fat content to skinless chicken breast.
