Ingredients

  • 600g pork tenderloin
  • 2 eating apples, cored and sliced
  • 8 fresh sage leaves
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 100ml chicken stock
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Method

    Preheat oven to 200°C / 180°C fan.

    Season pork all over with salt, pepper, and garlic.

    Heat olive oil in an ovenproof frying pan over high heat. Sear pork 2–3 minutes per side until golden.

    Add apple slices and sage to the pan. Pour in stock and stir in mustard.

    Transfer to oven and roast 18–20 minutes until pork reaches 63°C internal temperature.

    Rest 5 minutes, then slice and serve with the pan juices spooned over.

Tip: Serve with steamed green beans and a small portion of mashed celeriac for a complete low-carb meal.
