Tender lamb shoulder slow-cooked with apricots, chickpeas, and warming Moroccan spices. Serve with couscous for an authentic North African feast.

Ingredients

  • 600g lamb shoulder, diced
  • 400g tin chickpeas, drained
  • 100g dried apricots, halved
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 400g tin chopped tomatoes
  • 300ml lamb stock
  • 2 tsp ras el hanout
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tbsp honey
  • 1 tbsp olive oil
  • Fresh coriander and flaked almonds

Method

    Brown lamb in oil in batches. Set aside.

    Soften onion and garlic 3 min. Add spices, cook 1 min.

    Return lamb. Add tomatoes, stock, apricots, chickpeas, and honey.

    Cover and simmer 1 hr 15 min until lamb is tender.

    Season and serve with coriander and almonds.

Tip: Ras el hanout is a blend of up to 30 spices, many of which have anti-inflammatory properties including turmeric, ginger, and cinnamon.
