Ingredients

  • 300g red lentils, rinsed
  • 1 tin (400g) chopped tomatoes
  • 200ml light coconut milk
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cm fresh ginger, grated
  • 2 large handfuls of spinach
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 2 tbsp olive oil
  • Fresh coriander and rice to serve

Method

    Heat olive oil in a large pan. Fry onion, garlic, and ginger for 5 minutes.

    Add spices and cook 1 minute.

    Add lentils, tomatoes, and 400ml water. Bring to a boil.

    Simmer 20 minutes until lentils are soft, stirring occasionally.

    Stir in coconut milk and spinach. Cook 3 minutes.

    Season well. Serve with rice and fresh coriander.

Tip: Red lentils are one of the fastest-cooking legumes — no soaking required and ready in 20 minutes.
