Ingredients

  • 400g lean lamb mince
  • 1 egg
  • 30g breadcrumbs
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 200g orzo pasta
  • 400g tin chopped tomatoes
  • 600ml chicken stock
  • Juice of 1 lemon
  • 80g feta, crumbled
  • Fresh mint and parsley

Method

    Mix lamb, egg, breadcrumbs, garlic, oregano, and cumin. Form into 20 meatballs.

    Brown meatballs in oil 5 min. Set aside.

    Add tomatoes, stock, and lemon to pan. Bring to simmer.

    Add orzo and meatballs. Cook 12–15 min until orzo is tender.

    Serve topped with feta, mint, and parsley.
