Ingredients

  • 2 cod fillets (150g each)
  • 2 medium sweet potatoes, cut into wedges
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Juice of ½ lemon
  • 3 tbsp low-fat Greek yogurt
  • 1 tbsp capers, chopped
  • 1 tbsp gherkins, finely chopped
  • 1 tsp Dijon mustard

Method

    Preheat oven to 200°C / 180°C fan.

    Toss sweet potato wedges with olive oil, paprika, and garlic powder. Spread on a baking tray.

    Roast wedges 20 minutes, then push to one side.

    Season cod fillets with lemon juice, salt, and pepper. Place on the tray.

    Bake a further 12–15 minutes until cod flakes easily.

    Mix yogurt, capers, gherkins, and mustard for the tartare sauce. Serve alongside.

Tip: Sweet potato wedges have a lower glycaemic index than regular chips, helping to keep blood sugar stable.
