Lighter Chicken Tikka Masala

All the rich, aromatic flavour of a classic tikka masala — made lighter with low-fat yogurt and a tomato-based sauce. Serve with cauliflower rice to keep it under 400 kcal.

Ingredients

  • 600g chicken breast, cubed
  • 150g low-fat natural yogurt
  • 2 tbsp tikka masala paste
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 400g tin chopped tomatoes
  • 100ml reduced-fat coconut milk
  • 1 tsp garam masala
  • 1 tbsp vegetable oil
  • Fresh coriander to serve

Method

    Mix chicken with yogurt and 1 tbsp tikka paste. Marinate 30 minutes (or overnight).

    Grill or pan-fry chicken pieces over high heat until charred and cooked through. Set aside.

    Heat oil in a pan, soften onion 5 minutes. Add garlic, ginger, and remaining paste, cook 2 minutes.

    Add chopped tomatoes and simmer 10 minutes until thickened.

    Stir in coconut milk and garam masala. Add chicken and simmer 5 minutes.

    Scatter with coriander and serve with cauliflower rice or 60g cooked basmati.

Tip: Cauliflower rice instead of basmati saves around 120 kcal per serving.
