  • 150g oat flour (or blended oats)
  • 1 tsp baking powder
  • 2 large eggs
  • 200ml semi-skimmed milk
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 tbsp melted coconut oil
  • 200g mixed berries
  • 100g Greek yogurt to serve

    Preheat waffle iron and grease lightly.

    Whisk together oat flour and baking powder.

    In another bowl, whisk eggs, milk, honey, vanilla, and coconut oil.

    Combine wet and dry ingredients until just mixed — don't overwork.

    Pour batter into waffle iron and cook per manufacturer's instructions (usually 4–5 minutes).

Tip: Oat flour has a lower GI than white flour, meaning slower energy release and less hunger.
