Lemon Garlic Prawn Linguine

Ingredients

  • 200g dried linguine
  • 300g raw king prawns, peeled
  • 4 cloves garlic, thinly sliced
  • Zest and juice of 1 lemon
  • 100ml dry white wine
  • 2 tbsp olive oil
  • 1 tsp chilli flakes
  • Small bunch of flat-leaf parsley, chopped
  • Salt and black pepper to taste

Method

    Cook linguine in salted boiling water until al dente. Reserve 100ml pasta water before draining.

    Heat olive oil in a large frying pan over medium-high heat. Add garlic and chilli flakes, cook 1 minute.

    Add prawns and cook 2 minutes per side until pink. Remove and set aside.

    Pour wine into the pan and let it bubble for 2 minutes.

    Add drained pasta, prawns, lemon zest, and juice. Toss, adding pasta water to loosen.

    Season well, scatter with parsley, and serve immediately.

Tip: Use wholewheat linguine to add 4g extra fibre per serving.
