A classic French onion soup made lighter with less butter and a reduced-fat cheese topping. Rich, deeply savoury, and satisfying.

Ingredients

  • 4 large onions, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp butter
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme
  • 1 tbsp plain flour
  • 150ml dry white wine
  • 1 litre beef stock
  • 4 slices wholegrain baguette
  • 60g reduced-fat Gruyère, grated
  • Salt and pepper

Method

    Heat oil and butter in a large pot. Add onions and cook on low heat for 30 minutes, stirring often, until deeply caramelised.

    Add garlic and thyme, cook 2 minutes.

    Stir in flour, then add wine. Cook 2 minutes.

    Add stock, bring to a boil, simmer 10 minutes. Season.

    Ladle into oven-safe bowls. Top with baguette and cheese.

    Grill for 3–4 minutes until cheese is bubbling.

Tip: Slow-caramelising onions develops natural sweetness without added sugar.
