Eggs poached in a rich, spiced tomato sauce with peppers and onions. A Middle Eastern classic that's equally good for breakfast, brunch, or a light dinner.

Ingredients

  • 4 large eggs
  • 1 tin (400g) chopped tomatoes
  • 1 red pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp chilli flakes
  • 1 tbsp olive oil
  • Fresh coriander and feta to serve

Method

    Heat olive oil in a wide pan. Fry onion and pepper for 5 minutes until softened.

    Add garlic, cumin, paprika, and chilli. Cook 1 minute.

    Add tomatoes, season well, and simmer 8–10 minutes until thickened.

    Make 4 wells in the sauce. Crack an egg into each well.

    Cover and cook 5–6 minutes until whites are set but yolks are still runny.

    Scatter with feta and coriander. Serve with crusty bread.
